Baking Tray Pavlova

Serves 6 - takes 90 mins (15 mins hands-on)

My favourite dessert on earth! And SO easy to make. I’ve got my kids trained at this point to make this while I supervise. And it always come out perfect. Don’t feel stuck on my berry choices btw, anything fresh works.

- 5 egg whites (room temperature)
- 1 1/4 cup caster sugar
- 2 tsp cornflour
- 1 tsp lemon juice
- 473ml whipping cream (35% fat)
- 1 cup blueberries
- 1 cup raspberries
- 1 cup blackberries

Preheat over to 250F. In an electric mixer beat egg whites until soft peaks form. Add 1 cup sugar, sifted cornflour and lemon juice and beat until stiff (approx. 10 mins). Lay out mixture on parchment covered baking tray. Bake for 1½ hours or until slightly golden.

Meanwhile whip cream and remaining ¼ cup caster sugar.

Turn oven off and let pavlova cool for 30 mins with oven door cracked.

Top with cream and berries of choice, sprinkle with icing sugar and serve off the tray. No mess, no fuss.
