Faith's Lemon Cream Cheese Shortbread Snowstorms

For a guy who doesn’t love the handcuffs of baking all that much these tender little morsels hit the note. 6 ingredients, easy to follow, hard to mess up. And they taste like heaven.  

 Prep 45 mins/cook time 20 mins

Cookie ingredients
1 cup unsalted butter, room temp
3/4 cup icing sugar
1/4 tsp salt
- 2 cups all-purpose flour

Filling ingredients
- 4 oz cream cheese (1/2 packet of Philadelphia)
zest and juice of ½ lemon
¼ cup sugar

In a mixer or bowl with a wooden spoon mash up your sugar, butter & salt until fluffy. Then add flour until combined.

Roll mixture into a cigar shaped tube around 1 to 1 ½ inches thick. Then roll up in plastic wrap and place in freezer for 10/15 mins. Then remove and cut into 1/3 inch slices and place on parchment paper on oven tray – place around 1 inch apart (be sure to remove plastic wrap of course). 

Slide into oven preheated to 300 degrees until slightly golden. Approx. 20 mins. Remove and let cool.

Meanwhile in a small bowl fork mash room-temp cream cheese, lemon juice, zest and sugar. Spoon into plastic bag and slice the corner with knife (use as piping bag). Squeeze a decent dab between two cookies and press firmly. Dust with confectionary sugar (or not). Devour and enjoy.
