Honey Roasted Salmon w Smashed Wasabi Peas
Takes 20 mins - Serves 2
One of the most delicious, easiest roasted salmon dishes I’ve ever made. Zero modesty, try it and you'll agree.
- 10 to 12 ounces fresh salmon filet (skin on is fine), or 2 pieces
- 2 tsp honey
- I lemon
- 1 Tbsp. rough torn dill
- 1 Tbsp. wasabi peas, smashed with the side of your knife
Pre-heat oven to 450F. On a parchment lined roasting tray, place salmon skin side down - drizzle the flesh side with honey, salt & pepper. Roast for 15/20 mins (depending on thickness). Let rest for 5 mins once done.
To serve gently tear salmon into large chunks, add a light zest & squeeze of lemon, sprigs of dill, drizzle of good quality olive oil finely and smashed wasabi peas. Yep. That’s ALL.
