Lamb Chops w Parsley, Mint & Pistachio
Spring has sprung my lovelies. Easy breezy 10 min lamb chops recipe!
- Lamb Chops
- 1 Tspn cumin
- Handful of parsley
- Handful of mint
- 1/2 a red onion
- 1/2 handful of pistachio nuts
Dressing (this amount will make extra dressing)
- 1/2 cup olive oil
- 1/4 cup white wine vinegar, I like Maille (any vinegar will do)
- 1 Tspn of honey
- 1 Tspn of cumin
Season lamb chops with olive oil, salt/pepper & a sprinkle of cumin. Grill 3-4 mins per side (be sure fat is rendered/crispy).
Roughly tear up herbs, toss w onion in your bowl. Add oil, vinegar, honey, cumin & salt/pepper in a jar, shake.
Let lamb chops rest for 4-5 minutes, place on top of salad, drizzle lamb chops & salad w dressing & sprinkle over rough chopped pistachios. A dream in every bite (if I can say so myself).
