Roasted Pears w Pecans & Prunes
Serves 4/6 - takes 10 mins prep/45 mins cook time.
The sweetness that erupts from pears when you bake ’em is heaven. Throw in prunes, the crunch of toasted pecans and a little unexpected wow of orange and you’ve kicked ol’ man winter in the butt.
- 4 pears (I like Bartlett for this)
- 1 cup seedless prunes, roughly chopped
- 1 cup pecans, roughly chopped
- ¼ lb. butter, melted
- 1 lemon, zest and juice
- ½ orange, zest and juice
- ¼ cup brown sugar
- 4 cinnamon sticks
Preheat oven to 400F. Cut pears in half, remove cores and place in an oven-proof roasting dish cutside up (a cake tray also works but use ceramic - must be oven proof). In a bowl, mix prunes, pecans, butter, zest and juice of lemon and orange and sugar. Pour mixture over halved pears. Add cinnamon sticks and roast, uncovered until pears are golden and tender about 45 minutes. Serve with a dollop of vanilla ice cream or whipped cream.
