Thai Coconut Chicken Soup
THIS is why I love Asian inspired dishes... enormous flavours & ridiculously EASY.
For this super-simple Thai coconut soup recipe featuring succulent chunks of chicken, find a good sized pot and combine:
- 1 cup coconut milk
- 3 cups chicken broth
- 2 lbs boneless chicken thighs (cut into chunks)
- 1 tbsp finely chopped ginger
- 1 chopped tomato
- Handful of Coriander (save 1/2 for garnish)
- Few basil leaves
- 2 tbsp fish sauce
- 1 chopped chili
Allow your coconut soup to simmer for 10 mins. Garnish with a lime and dry roasted peanuts (toss peanuts in a pan with no oil). Crack a beer or white wine and tell yourself how awesome you are. Cuz you are!!
