Thai Style Beef Oatmeal

- 6 to 8 ounces beef tenderloin or sirloin, cut into 1/4 / 1/8 inch strips
- ½ white onion thinly sliced
- ½ cup steel cut oats
- 2 cups water
- 2 tbsp soy sauce
- 1 tsp Worcestershire
- 1 tbsp sesame oil
- ¼ cup thinly sliced green onion
- zest of ½ lime
- juice of ¼ lime
In a high heat heavy bottom pot add a splash of vegetable oil, sear onions until dark brown, then add beef (with a good pinch of salt) and sear for 30/60 seconds or until brown, then add steel cut oats, water, soy, Worcestershire and stir to remove crispy bits from pan base. Cover with lid, reduce heat to medium and simmer until oats are al dente (approx. 15 mins), stir occasionally, add a splash of water if required. You’re looking for a thick risotto like consistency.
Once oats are al dente remove pot from heat, stir in juice of ¼ lime, check seasoning. Plate and garnish with zest of ½ lime, 1 tbsp drizzle of sesame seed oil and green onions.
