Tuna Salad (Mayo-Less), Watercress, Radish & Basil Oil
What if your tender heart could have all the creaminess of your fav tuna salad w/o the mayo… a load more flavour without the guilt? Oh you’re gonna love me after this one….
- 1 drained small tin of chunk tuna
- 1 tbsp Dijon mustard
- 1 heaped tbsp 0% fat Greek yoghurt
- 1 handful of watercress (arugula or spinach is great also)
- 1 thinly sliced radish
- 1 tbsp low fat feta
- 1 handful of fresh basil
- 1 cup of olive oil
In a bowl combine tuna, Dijon and Greek yoghurt, season to taste.
Immerse clean basil leaves in a pot of boiling water for 10 seconds. Remove and pat dry. Then finely blend them in a blender with 1 cup of olive oil, add a good pinch of salt (I like to transfer it to a squeeze bottle. This will last in the fridge for weeks).
Lay your greens on the plate, top with a dollop of tuna salad, thinly sliced radish, crumble over feta and a good drizzle of your basil oil. Add a drizzle of olive oil if you like.
