Pancakes w Tinned Peaches, Greek Yoghurt & Molasses “Dulce De Leche”

Serves 4 – takes 25 mins

I adore pancakes but hate both the gals and I gorging on pure sugar for brunch. Dulce de leche is basically caramel (milk and sugar). I’m not giving my kids that first thing so I came up with a fun version by combining yoghurt and molasses. Tastes like heaven and won’t have your monkeys bouncing off the walls all day.

Pancakes
1 ½ cups whole-wheat flour
2 tsp baking powder
½ tsp baking soda
2 eggs
1 ½ cup full fat milk
2 Tbsp. molasses
¼ tsp salt

Peach topping
I can (106oz/3kg) sliced peaches in syrup
1/2 tsp cinnamon

Dulce De Leche
2/3 cup 0% Greek yoghurt
1/4 cup molasses

¼ cup chopped walnuts

Whisk all pancake ingredients in a mixing bowl and set aside to rest for 5 mins.

Meanwhile, in a heavy bottom pot over medium heat add peaches, along with the syrup from the can, and cinnamon. Stir occasionally until syrup has reduced by around half.

While that’s reducing combine the Greek yoghurt and molasses in a small bowl.

In a heavy bottom fry pan on medium heat add a knob of butter, add ¼ cup of pancake mixture, turn when you see bubbles. Serve 3 per portion, spoon over peach mixture and cinnamon syrup, add a dollop of your Dulce and walnuts.
