Chickpea Chowder w Lemon & Olive Oil

- 1 can of chickpeas (rinsed)
- ¼ white onion
- 1 ½ or 2 cups of stock (veg or chicken)
- 1 garlic clove
- dash of your fav hot sauce
- ½ a lemon
When it comes to soups most of us usually cut the ingredients, cook them, then blend until smooth. Not here - were gonna do it in reverse.
In a blender toss all your ingredients, minus the ½ lemon. Blend until silky smooth (60 seconds approx.). You may want to add more stock depending on the thickness you prefer. Heat up in pot. Season w salt/pepper. Garnish with zest and squeeze of lemon, olive oil.
