Faith’s "Feel-Good" Oatmeal Choc Chip Cookies
I’m not a huge baker but these are an easy go-to when the monkeys want something sweet as I know I’ll always have these ingredients at hand. The whole affair takes maybe 30 mins. Time enough for daddy to return some emails while they make’em. Don’t be thrown off by the tiny dab of balsamic vinegar, it’s my secret weapon.
- 1 cup room temp unsalted butter
- 1 ½ cups brown sugar, packed
- 1 tsp vanilla
- 1 egg
- 1 ½ cups all-purpose flour (unbleached is fine also)
- 2 cups oats
- 1 tsp baking soda
- 1 tsp balsamic vinegar
- ¼ tsp salt
- 1 cup semi-sweet choc chips (or smash up whatever chocolate bar you have around).
Preheat oven to 350F. In a bowl stir butter and sugar until blended. Then add vanilla and egg until fluffy. Then combine flour, oats, baking soda, vinegar and salt. Lastly stir in choc chips.
Onto a parchment paper lined baking tray place portions, approx 2 Tbsp. per cookie around 5 cm apart. Bake 10 mins for gooey cookies - 12/15 mins for crispy or until golden. Remove from tray to wire rack, eat still warm or cool.
