Grilled Asparagus, Green Onions, Beans & Goats Cheese
Serves 4 - Takes 20 mins
A real fav of mine, crazy simple celebration of the season. Looks like heaven, tastes like a dream.
- 1 bunch of asparagus - 10 spears
- 1 cup green beans
- 1 bunch green onions - 6 to 8 stalks
- 100 grams goats cheese
- 1/4 cup rough torn parsley
- 1 1/2 Tbsp. fresh lemon juice
- 3 Tbsp. olive oil (for dressing)
I prefer this recipe with thinner asparagus, they grill up more tender without having to char them too much. I cut the beans down the centre, better mouth feel & they look sexier. Also, cut the white root tails off the green onions. Toss your beans, asparagus & green onions in a good splash of olive oil w salt/pepper, grill em on the BBQ, grill pan or regular pan, DON'T over grill, you want them a tad crispy.
Place on your platter, crumble over goats cheese, hand torn parsley, lemon, olive oil & cracked pepper. Sometimes I'll add a little crushed chili flakes as well. Open a bottle of white. I bet you’re smiling?
