Honey Roasted Salmon w Smashed Wasabi Peas

Takes 20 mins - Serves 2

Pre-heat oven to 450F. One of the most delicious, easiest roasted salmon dishes I’ve ever made. Zero modesty, try it and I think you'll agree. 

- 10 to 12 ounces fresh salmon filet (skin on is fine), or 2 pieces
- 2 tsp honey
- 1 lemon
- 1 Tbsp. rough torn fresh dill
- 1 Tbsp. wasabi peas, smashed with the side of your knife

On a parchment lined roasting tray, place salmon skin side down, drizzle the flesh side with honey, salt & pepper. Roast for 10 to 15 mins (depending on thickness). Let rest for 5 mins once done.

To serve gently tear salmon into large chunks, add a light zest & squeeze of lemon, sprigs of dill, drizzle of good quality olive oil and smashed wasabi peas. Serve it up with your favourite tossed greens salad and a fresh crispy baguette. Yep. Summer supper done!
