Lamb Chops w Parsley, Mint & Pistachio

Takes 10 mins - Serves 4

No matter the season, this simple but bold dish will have you feeling like spring has sprung. Easy breezy 10 min lamb chops recipe!
- 8 trimmed lamb chops
- 1 tsp. cumin
- 1 cup rough torn parsley
- 1/4 cup fresh mint
- 1/2 red onion, very thinly sliced
- 1/4 cup  pistachio nuts

Dressing (this amount will make extra dressing)
- 1/3 cup olive oil
- 3 Tbsp. white wine vinegar
- 1 Tspn honey
- 1 tsp. cumin
- Salt/pepper

Season lamb chops with olive oil, salt/pepper & a sprinkle of cumin. Grill 3-4 mins per side (be sure fat is rendered/crispy on the edges).

Add oil, vinegar, honey, cumin & salt/pepper in a jar, shake. Directly on your serving platter toss herbs and onion. Add dressing (save a couple of teaspoons). Place lamb chops on top of salad, drizzle remaining dressing over lamb chops and sprinkle over rough chopped pistachios. A dream in every bite (if I can say so myself).
