Lentil, Date, Feta & Parsley Salad

I was wandering around the supermarket yesterday and it occurred to me I’ve never used dates in a salad. On their own of course they’re quite sweet… but combined with the mild earthiness of lentils, creamy feta, zippy lemon zest and fresh parsley - boom, this thing really sings!

- 2 cups rinsed Lentils (from a can)
- ½ cup, finely chopped, pitted dates
- ½ cup crumbled feta
- Zest of 1 lemon
- Juice of ½ lemon
- ½ cup rough chopped parsley

Combine all ingredients in a bowl. You're done! The feta may be enough saltiness for your palate, if not add a few pinches of salt. You might find it odd I don’t add oil to this salad? For me, the lemon juice combined with the feta creates a super flavourful dressing on it’s own. If you’re so inclined add a few tablespoons of olive oil. I recommend not using a super spicy olive oil though - although this salad is bursting with flavour it’s a subtle combination.  A strong spicy olive oil would be too much.
