The Perfect Pavlova
Prep time 30 mins. cook time 2 hours.
An Aussie classic. This is the pavlova recipe Mom would make my brothers and I every Christmas morning for breakfast. Like eating a sweet cloud.
The pavlova in my picture shows 3 times the recipe below.
- *4 egg whites
- 1 1/4 cups white sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 2 tspns cornstarch
- 1 pint heavy cream
- Fruit to taste (your choice)
* Eggs peak better when at room temperature.
Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper.
Beat egg whites adding sugar slowly until whites peak and are thick and glossy. Gently fold in vanilla extract, lemon juice and cornstarch. Spoon onto parchment paper leaving a slight depression in the center. Bake for 1 hour. Cool on a wire rack.
Beat cream until thick, add sugar to taste, decorate your pav with any fruit you like. Have some fun and experiment, my fav is tinned peaches and passionfruit. In winter thaw frozen berries and toss in a little icing sugar. YUUUMMO.
