Steak , Coleslaw & Honey Mustard Sliders

A super cute & ULTRA tasty version on the classic slider. This steak slider is the perfect mouthful of tender steak and coleslaw in a couple of bites. Summer in your hand.

- Slider buns of choice
- Beef tenderloin (filet) - 4 to 5 oz per person
- 1 cup finely sliced red onion
- 1 cup finely sliced cabbage (napa or purple are fine)
- 1 cup grated carrot
- 1/3 cup of red wine vinegar
- 1/4 cup of olive oil
- 1 Tbsp. Dijon mustard

Honey Mustard Sauce
- Equal parts honey and Dijon mustard

Combine onions, carrots and cabbage, pinch of salt and pepper. Dressing; combine vinegar, olive oil & 1 tablespoon of Dijon, drizzle and toss over coleslaw (use amount of dressing to your own taste). Let slaw sit for 20 minutes minimum (the dressing marinates and softens the cabbage for a nicer mouth feel).

Cut your tenderloin into around ½ to 1 inch medallions, season well and grill to your liking (I like my steak sliders medium). 

Lightly toast your buns, slather with honey mustard (combine equal parts honey and dijon, or store bought), top with tenderloin and coleslaw, suck it down in 2 bites and grab another. Tastes like summer baby.
