Thai Coconut Chicken Soup

Takes 20 mins - Serves 4

This gorgeous celebration of That flavours could not be easier. Simply add all the ingredients to a medium pot over medium heat (hold back a little coriander for garnish) 

- 1 cup coconut milk
- 3 cups chicken broth
- 2 lbs boneless chicken thighs (cut into 1/2 inch cubes)
- 1 Tbsp finely chopped ginger
- 1 tomato, rough chopped
- Handful of coriander (save 1/2 for garnish)
- 1/4 cup basil leaves
- 2 Tbsp fish sauce
- 1 chopped chili (to taste)
- 1 lime
- 1/4 cup peanuts (dry roasted)

Allow your coconut soup to simmer gently for 15 mins with the lid on. Garnish with a lime and dry roasted peanuts (toss peanuts in a pan with no oil). Crack a beer or white wine and tell yourself how awesome you are. Cuz you are!!
