A Side of Summer

Takes 10 mins - Serves 4 (app size)

A quick and easy side that brings a huge hit off summer freshness to any portion. Perfect with fish, chicken or a juicy steak.

- 8 to 10 ripe roma tomatoes (cut in halves)
- 1 large (2 medium) red onions, finely diced
- 1/2 cup white wine vinegar
- 2 Tbsp. capers
- 3 Tbsp. finely chopped chives
- 3 Tbsp. olive oil

In a large heavy base fry pan add a good splash of olive oil. Season cut side of tomatoes with salt and char face down, be careful not to move them too much. Place them and leave them. Turn them over to char lightly on skin side.

Meanwhile, in a separate pot or pan add onions and vinegar and simmer on high medium heat for 3 mins.

Once tomatoes are done in fry pan remove and set aside, with heat still on medium high add capers. Fry until they open, 3 to 4 mins, add more oil if required. Remove and drain on paper towel.  

Plate up your warm tomatoes, strain capers & onions and sprinkle on top, add finely chopped chives, drizzle w olive oil, salt and ground pepper.
